Sakhar Aamba – Sakhar means sugar and aamba means mango in marathi. A simple sweet side dish to go with your paratha, chapatti or toasted bread. As mangoes are in season try this yummy, tangy and sweet recipe. A very easy and sweet raw mango Sakhar Aamba prepared in no time. Mangoes are in season and with abundance of raw mangoes available, It’s perfect time to make this quick Sakhar Aamba and store in a large air tight jars to enjoy it all year.

To make this jam/sakhar aamba you need some grated raw mangoes. Measuring the grated mango and adding the double amount of sugar is my mom’s secret to make it perfect everytime. Another thing to keep in mind while making this jam is to cook it on a medium flame and stir it occasionally to prevent it from burning and as soon as you get two string consistency remove it from the stove.

Sakhar Aamba Recipe

Here is how to make this Sakhar Aamba – an Indian raw mango jam that you can enjoy with parathas/chapatis/bread or with your meals as a side dish.

INGREDIENTS

  • Raw mangoes (peeled and grated) – 2 cups
  • Sugar – 4 cups
  • Cardamom powder – 1 tsp
  • Charoli/Chironji – 2 tsp (optional)

INSTRUCTIONS

  1. In a bowl add peeled and grated raw mangoes and sugar.
  2. Mix well. Cover and keep aside for 2-3 hours or till sugar dissolves completely.
  3. Heat this mixture in a pan on a medium flame stirring occasionally till it thickens or sugar syrup of two string consistency forms.
  4. Switch off the flame and remove the pan from the stove.
  5. Add cardamom powder and chironji. Give it a mix and let it cool down.
  6. Transfer it to a glass jar.
  7. Your Desi Jam is ready. Enjoyyyy !!!!

RECIPE NOTES

You can increase/decrease the amount of sugar as per your taste and also as per the sourness of raw magoes.
