Piyush is a very popular beverage in Maharashtrian and Gujarati cuisine. This smooth and creamy drink is made mainly from shrikhand. Shrikhand (a thick yogurt-based dessert) is mixed with curd/buttermilk and flavored with cardamom and nutmeg powder to make this creamy summer drink. Some people also call it ‘Shrikhand lassi’ as it is very similar to the Punjabi beverage ‘Lassi’. But Piyush is thicker, sweeter as compared to lassi.

This luscious and creamy drink is quick and easy to make. This cooling drink can be made with ready-made shrikhand or you can make shrikhand from scratch and use it to make this summer cooler. I used store-bought badam-pista flavored(almond-pistachios flavor) shrikhand here.

My recipe does not use buttermilk but homemade yogurt and milk. Also, nuts and saffron are added to this drink. This drink is great for people who are fasting as it’s filling and keeps the hunger pangs at bay. It tastes best when chilled. So recommend refrigerating it before serving.

Ingredients
  

  • 1 cup Shrikhanda
  • 1 cup Curd/Yogurt
  • 3/4 cup Milk
  • 1/2 tsp Cardamom powder
  • 1/4 tsp Nutmeg powder
  • Almonds, Pistachios, Saffron, for garnishing

Instructions
 

  • In a blender jar, add shrikhanda, curd, milk, cardamom powder, nutmeg powder. Blend everything well together.
  • Pour piyush in serving glasses.
  • Garnish with some chopped dry fruits and saffron. Serve chilled.
