Phodnichi poli is a very common and easy Maharashtrian breakfast recipe. Phodni means tempering and Poli means roti/chapati. So, phodnichi poli is nothing but rotis tempered with aromatic spices. This is one of the best leftover roti recipes as it is easy and quick to make and needs just basic ingredients available at home.

If you have some leftover rotis from the previous night’s dinner, don’t throw them away! You can easily transform them into a delicious breakfast or snack with a few simple steps.


Phodnichi poli

Phodnichi poli uses leftover whole wheat rotis and some basic ingredients like onion, curry leaves, and spices like mustard seeds, turmeric, red chili powder, salt and sugar. The leftover rotis are crushed with hands or mixer grinder and tempered with spices. Phodnichi poli is also known as Policha Kuskara, Tukde, Masala roti or Policha Chivda.

Ingredients
  

  • 4 no. Rotis/Chapatis, Leftover
  • 3 tblsp Oil
  • 1/4 tsp Mustard seeds
  • 1/4 tsp Jeera
  • 1 no. Onion, medium size
  • 1/2 tsp Ginger-garlic paste
  • 8-10 no. Curry leaves
  • 1/2 tsp Turmeric
  • 1 tsp Red chilli powder
  • 1/4 tsp Sugar, optional
  • Salt , to taste
  • 1 tblsp Coriander, finely chopped

Instructions
 

  • Coarsely grind the leftover rotis in a mixer grinder.
  • Heat oil in a pan/kadhai. Add mustard seeds and let it splutter.
  • Add jeera. Let it splutter.
  • Add chopped onion and sauté on a medium flame for 1 min.
  • Add 1/2 tsp ginger-garlic paste. Sauté till raw smell goes off.
  • Add curry leaves and give it a mix.
  • Add turmeric and red chili powder. Give it a quick mix.
  • Add grounded rotis, salt and sugar. Mix well. Cover and cook on low flame for about 5 minutes.
  • Switch off the flame. Add finely chopped coriander leaves. Mix well and serve hot.
