Koshimbir is a typical Maharashtrian salad served as an accompaniment to the main dish. Any Maharashtrian meal is incomplete without koshimbir in it. A meal must contain a salad to make it fully nutritious. Maharashtrian salad/koshimbiri or chutneys enhance the flavor of your meal.
There are so many different types of koshimbiri like kakdi koshimbir, onion tomato, cabbage koshimbir and what not. Here today I am sharing how to make Gajar Mulyachi Koshimbir. This is very easy and quick recipe. Usually we temper our koshimbiri with tadka but sometimes I just skip it and make it simple and it tastes great as well.

Here is how to make this easy and healthy koshimbir/salad.
Carrot Radish Salad | Gajar Mulyachi Koshimbir
- 1 cup Carrot , grated
- 1 cup Radish , grated
- 1/2 cup Tomato, finely chopped
- 2 tbsp Coriander leaves , finely chopped
- 2 Green chillies , cut into slits
- 3-4 tbsp Lemon juice
- Salt, to taste
- Take a mixing bowl, add all the above ingredients and mix well.
- Serve immediately with meals/parathas.
